The Samosa is a lovely snack food enjoyed by millions of people over most of India, Pakistan and Bangladesh. It is a fried pastry, filled with spiced potatoes and peas. Today we will make this lovely vegetarian samosa.

Ingredients

Samosa Dough

  • 1 tbsp Salt

  • 1 tbsp Carron seeds

  • 4 tbsp Oil

  • 500 grams All-Purpose Flour

Let's prepare our dough. In an empty bowl, add the flour followed by the Carron seeds. Next, add the salt. Using your hand, mix the entire content. Once mixed add in the oil. Continue to mix the dough and add a little bit of water. Continue to add some water and mix until the dough is rough and thick.

Once the dough is ready, cover the bowl using clean fil and put it to one side for 15-20 minutes.

Samosa Stuffing

  • 2 tbsp Salt

  • 12 Garlic cloves

  • 2 tbsp Chat Masala Powder

  • 4 tbsp Oil

  • 4 Green Chillies

  • 1 tbsp Garam Masala Powder

  • 1 tbsp Ginger Paste

  • 3 tbsp Fresh Coriander

  • 12 Cashews

  • 1 tbsp Cumin Powder

  • 1 tbsp Red Chilli Powder

  • 6 Boiled Potatoes

  • 500 grams Green Peas

  • 1 tbsp Turmeric Powder

Next, let's make the stuffing. In a bowl, mash the potatoes using a smasher. Once they are smashed, place a cooking pot on top of your cooker. Add the oil into the cooking pot and allow the oil to heat up. Next, add the garlic and wait for it to be a rich golden brown colour.

Next, let's add the ginger paste as well as the green chillies. Allow it to fry for about 2 minutes. Next, add in your green peas. Again, allow it to fry for about 2 minutes on a medium flame. Let's add in the turmeric powder as well as the chilli powder and give it a good mix.

Next, let's add in the cashews and allow to fry for 1 minute. Also, let's add in the potatoes into the cooking pot. Now let's add in our garam masala powder as well as the cumin powder. Also, add in the salt and give the cooking pot a good mix. Let's also reduce the flame to low.

Now, add in the chaat masala and mix it, allow it to fry for 2 minutes. Finally, add in the fresh coriander. Allow some time for your stuff to cook down and turn off your flame.

Preparing the Samosa

We now will need to shape out our samosa using the daugh from earlier. Get your dough and tear off a small amount of dough and roll it into a bowl. On your kitchen surface, place some flour and use that surface and a rolling pin to flatten out to dough ball into a large circle. Once done, cut the circle into two halves and slowly start to form a triangle shape with each side ensuring that the bottom of the triangle is big enough to fit a spoon inside.

Stuffing the Samosa

Now, fill in the samosa dough with your stuffing and seal the mouth of the samosa using some water. Continue to do this until you have as many samosa's as you want.

Cooking the Samos

Put a pan on the cooker and pour about 1 litre of oil into it. Allow the oil to heat up. Once the oil is hot, start to put your samosa's and allow it to fry. Repeat this process until you have fried all your samosas.

Your samosas should now be ready to serve.
