The Rogan josh is an aromatic curried meat dish of Kashmiri and Persian origin. It is made with traditionally lamb or goat meat and is one of the signature recipes of Kashmiri cuisine.
Ingredients
Preparing our Cloth of Ingredients
1 tsp Fennel Seeds
1 tsp Caraway Seeds
10 Cloves
6 Green Cardamoms
5 Black Cardamon
1 Star Anise
1 Nutmeg
2 Curry Leaves
5 Cinnamon Stick
1 tsp Cumin Seeds
1 tsp Black Pepper
1 tsp Coriander Seeds
In an empty and clean cloth, place all the items and tie it all into a small bundle. When we prepare our meat, we will add in this cloth bundle to help provide a nice smell and enhance the taste of the meat.
Garam Masala
2 Curry Leaves
5 Black Cardamoms
5 Green Cardamoms
4 Cinnamon Stick
1 tsp Coriander Seeds
1 tsp Fennel Seeds
Let's prepare our garam masala. Add the curry leaves, black cardamons, green cardamon, cinnamon stick, coriander seeds and fennel seeds into a blender. Blend the entire ingredients until a fine powder is produced. Once done, the garam masala powder is ready for later.
Prepare the Meat
6 tsp oil
2 medium-sized onions
1kg lamb
We will now need to prepare some dried fried onions. Place an empty cooking pot on the cooker and pour the oil in. Let's wait for it to heat up and then we will add the onions. Wait until the onions are a rich golden colour. Once cooked, place your onions on a tissue to allow the tissue to absorb the oil so that we have dried fried onions.
Mutton Preparation
Oil
6 tsp oil
2 tsp Ghee
3 tsp Yogurt
2 tsp Tomato Puree
1 tsp Garlic Powder
2 tsp Kashmiri Chilli Powder
1 tsp Turmeric Powder
1 tsp Red Chilli Powder
1 tsp Salt
1 tsp Coriander Powder
1 tsp Ginger Powder
Garam Masala Powder
Fried Onions
1 Kg of Mutton
Place a cooking pot on top of your cooker and pour the oil into it. Allow the oil to heat up and then add the ghee. next, let's add the mutton. We are adding the mutton early to allow the meat to fully cook by the end of the process.
After the mutton has become a light brown colour we can now add the fry fried onions and ensure to give it a good mix. Let's also add 600ml water. Close the lid and let the mutton cook for about 1 hour on a low flame.
Add the Cloth
Now, let's add the cloth of ingredients from earlier into the cooking pot.
After an hour, we can now add our remaining ingredients. Let's add the turmeric powder followed by the chilli powder. let's also add the coriander powder as well as the ginger powder.
Next, add the garlic powder as well as the salt. Also, now we can add the Kashmiri chilli powder. The Kashmiri chilli powder also adds a red colour to the dish. You can also add some red food colouring here to help make the dish redder.
Now we can add the tomato puree and give the dish a good mix. Also, let's add a single cup of water to ensure that the dish does not burn. This also helps to enhance the colour.
Remove the Cloth and Add The Garam Masala
Let's remove our cloth of ingredients and then add our earlier Garam Masala
Now, let's add the garam masala that we prepared earlier. We will also use this opportunity to add yoghurt. Close the lid for about 30 minutes on a medium flame. This will really help all your ingredients and meat to fuse together.
Your Rogan Hosh should now be ready to serve.
