Dum Chicken Biryani

Today's we will make the world-famous Hyderabadi Chicken Dum Biryani dish. It is made using marinated chicken and then cooked. The cooked chicken is then added to layers rice.


Ingredients


Biryani masala

  • 2 Curry Leaves

  • 3 Star Anise

  • 10 Cloves

  • 2 tsp Black Peppercorns

  • 3 Black Cardamom

  • 2 tsp Coriander

  • 12 green Cardamom

  • 20 small cut Cinnamon Stick

  • 2 tsp Cumin Seed

  • 2 tsp Fennel Seed

  • 2 Nutmeg

  • 3 Onion

Let's place all the ingredients into a blender as this will help us to create our masala powder. Continue to blend the entire ingredients into it's a fine powder.


Fried Onions

  • 5 tsp Oil

  • 3 Onion


Into an empty pan, pour the oil and allow it to heat up. Next, add your onions. After about 10 minutes, your onions should now be ready. Take the fried onion out for later.


Biriyani

  • 3 Fried Onion

  • 1 tsp Turmeric powder

  • 4 tsp Garam Masala Powder

  • 1 tsp Pink Food Colour

  • 1 tsp Yellow Food Colour

  • 2 tsp Salt

  • 1 tsp Red Chilli Powder

  • 3 tsp Yoghurt

  • 3 tsp Garlic and Ginger Paste

  • 5 tsp Oil

  • 1 tsp Crushed Green Chillies

  • 6 tsp Ghee

  • 1 cup Fresh Coriander

  • 1 cup Meant Leave

  • 4 Cloves

  • 5 Cinamon Stick

  • 4 Green Cardamom

  • 2 tsp Lemon Juice

  • 3 litre of Water

  • Chicken 1 kilo

  • Soak Basmati Rice in Water 1 kilo


Marinate the Chicken


In an empty bowl, add your chicken followed by your garlic paste and ginger paste. Next, add your biryani masala and your lemon juice. Let's also add the red chilli powder as well as the turmeric powder.


Next, add your yoghurt and salt into the bowl. Now let's add some of the fried onion from earlier. Also, add some mint and coriander. Now let's add the crushed chillies and finally add the ghee also.


Mix the entire chicken until it is fully covered and wrap the bowl and place it in the fridge for overnight. Try to leave it in the fridge for about 24 hours.


Cooking the chicken


After 24 hours, take your chicken out. Place an empty cooking pot on your cooker and put the chicken into the cooking pot. We will need to fully cook the chicken so leave the chicken the cooking pot for about 10 minutes. After 10 minutes, give the chicken a good mix and it should now be ready.


Preparing the Rice


In an empty cooking pot, add water as well as the salt. Also add in the oil as well as the cloves, cinnamon stick cardamon and cumin seeds. After adding all these into the water, give the water a good mix. Once the water is boiling, add in your rice. Close the lid and allow the rice to cook for about 10 minutes.


After 10 minutes, open the lid and your rice should be long, thin and nicely separated. Once the rice is done, take it out of the cooking pot and place it in a colander for later.


Making the Hyderabadi Chicken - Layers


Place an empty cooking pot on your cooker and add in the ghee. Once done, add some rice making sure to not add all of it. Once done, add some of your chicken. This is going to be the first layer of our rice and chicken.


Now, let's repeat the process by adding another layer of rice with another layer of chicken. In between our layers of rice and chicken let's also add some mint leaves and coriander. Also, add some garam masala as well as some fried onion.


Continue to add layers of rice, chicken, mint leaves, coriander, garam masala and fried onions until you have between 3-5 layers.
