Butter Chicken

Butter chicken or Murg Makhani is a dish, originating from India. It is Chicken placed in a mildly spiced tomato sauce. The dish was made "by chance" by mixing the leftover chicken in a tomato gravy, rich in butter and cream.


Ingredients

  • 2 tbsp Sugar

  • 1 tbsp Coriander Powder

  • 2 tbsp Kashmiri Chilli Powder

  • 2 tbsp Garam Masala Powder

  • 5 tbsp Butter

  • 2 tbsp fresh Garlic paste

  • 2 tbsp fresh Ginger paste

  • 1 tbsp Turmeric Powder

  • 50 grams cashew

  • 3 tbsp Fresh Coriander

  • 100 grams roughly cut Onions

  • 3 tbsp Cream

  • 2 tbsp Salt

  • 5 tbsp Oil

  • 2 tbsp Malt Vinegar

  • 1 Glass of Water

  • 500 grams roughly slit Tomatoes

  • 600 grams Chicken breast boneless

Marinating your Chicken


In your chicken bowl, add the turmeric powder as well as the chilli powder. Let's also add the salt and the garlic and ginger paste. Next, let's add the cream and give the chicken a good mix. Let's cover the bowl with clean fill and place it in the fridge for about 15-20 minutes. The longer you keep it marinated, the taster it will be but 15-20 minutes should be enough for butter chicken.


Frying your Chicken Pieces


In an empty pan, add the oil and allow it to heat up over a medium flame. Start to place your chicken pieces on the pan to allow the chicken pieces to fry. Make sure to flip each of the chicken pieces to allow both sides of a chicken piece to fully cook.


Leave each side on a medium flame for about 4 minutes. Once completed, transfer your chicken piece into an empty bowl for later.


Preparing the Paste


In the same pan, add your oil followed by the onions. Allow the onions to cook into a rich brown colour. Add the butter and then give the pan a good mix.


Next, add the tomatoes and give it a mix. Let's also add our cashews next and then add one glass of water to prevent our base from burning. Let's add the garlic and ginger paste as well as the salt. Ensure to give this all a really good mix and then add the malt vinegar.


Add the sugar and the turmeric powder. Also, add the chilli powder as well as the coriander powder. Finally, let's add in the garam masala. Ensure to evenly mix and allow the base to cook for about 15-20 minutes. Once done, transfer the base into an empty bowl.


Blending the paste


Blende the paste into a fine puree. Once blended, using a filter pour the paste back into the pan and re-heat it for about 5 minutes. After 5 minutes, add the butter and give it a good mix.


Adding the Chicken


Now, let's add our chicken from earlier into our puree and mix the butter chicken dish. Also, let's add some fresh coriander for that great fresh taste.


Your butter chicken dish is now ready to be served. Once it is served on a plate, you can optionally place some fresh cream around the butter chicken.
