Bangladeshi Fish Curry

Hilsha or Illisha is the national fish of Bangladesh. It is a very popular fish and highly sought after. It is also commonly used with other vegetables such as potato and Eddoe. It is a chewy fish and great to use when making fillets or slices, good for children and adults.


In today's dish, we will make one of my personal favourite dishes, Illisha with Eddoe. Hello and welcome to Rony's Restaurants.


Ingredients


  • 8 Green Chilies

  • 2 tbsp Coriander Powder

  • 1 smashed Garlic

  • 1 tbsp Turmeric Powder

  • 2 tbsp Red Chilies Powder

  • 3 tbsp Fried Oil

  • 4 tbsp Fresh Coriander

  • 1 Hilsa Fried Fish

  • 2 Medium-size Onions

  • 1 kg Eddoes

  • 1 tbsp Salt

Instructions


Preparing the Hilsa


We will first need to prepare our Hilsa fish. Let’s start by cutting off the fins. We will then also remove the scales from the fish.


Now let’s cut our fishes in equal pieces alongside. I am leaving about one finger widths gap in-between each piece.


Once your fish has been cut, we can now move on to frying it.


Preparing the Eddoe


This is a simple task, we need to peel the Eddoe and sure the skin of the vegetable is fully removed. Once that is done, we can begin to cut the Eddoe into small shapes. Once cut, place them cut Eddoe into a bowl of water.


Frying the Fish


Also let’s add some Turmeric powder, chilli powder and some salt and paste the entire fish piece with it. Next, place a frying pan on a medium flame and place the fish into the pan. Once that is done, let’s wait for about 5 minutes, ensure to cover the lid.


After 5 minutes, flip the fish inside the pan and you will notice that the fish has started to glow a golden brown colour. Place the lid back on for a further 4 minutes.


After 4 minutes, the fish should now be fried. Place the fish on a plate for a little later.


Preparing the base Masala


Place a cooking pot onto over a medium flame and add the oil and allow it to warm up. Next, add the smashed garlic and give the pot a good mix. Next, let’s add the smashed onions and again give the pot a mix. We can now add the salt and again give the pot a mix.


Now let’s close the lid for 5 minutes on a medium flame. After 5 minutes, the onions should be cooked well. Let’s add the Turmeric powder, Red chilli powder, coriander powder and now let’s mix the masala.


The masala should now begin to get a little dry. To ensure that it does not burn, add some water. Close the lid for about 3 minutes to allow the masala to cook.


After 3 minutes, the masala should be cooked well.


Adding the Eddoe


With our Masala now cooked, let’s add in the Eddoe. After adding, close the lid for 10 minutes on a low flame.


After 10 minutes, you should start to notice that the Eddoe is getting softer. Now we can add some water as well as the green chillies and close the lid for 10 minutes on a medium flame.


After 10 minutes, remove the lid and you should see that the Eddoe is very soft and should be almost cooked. Let’s change the flame to a low setting and allow the Eddoe to almost fully cooked.


Adding the Hilsa


Now let’s add the Hilsa to the dish. Make sure to add them in softly as mixing the dish may break the fish. Close the lid for a further 5 minutes and the dish should now be ready.


Let’s add one final touch which is to add some fresh coriander.


The Hilsa and Eddoe dish is now ready to serve.
