Gajar ka halwa is a carrot-based sweet dessert pudding from India. It is made using grated carrots with milk, sugar, cardamoms, almonds, raisins and more. It is an amazing savoury dish and perfect for festive and traditional occasions.
Ingredients
Milk
2 Cups powder milk (250 grams)
1 cup Yogurt
Gagar Ka Halwa
1 tbsp Green Cardamom
1 tbsp Red food colouring
1 cup Raisins
2 Cups Sugar
Melted Butter (250 grams)
1 Cup Pistachio
4 tbsp Almond
1 Kg Carrots small cubes cut
600ml of milk in Glass
4 tbsp yoghurt
Instructions
Preparing the Milk
Let's mix the milk powder and yoghurt together. Once done we will place it in the microwave for 1 minute. After a minute, let's take it out and mix it and place it back into the microwave.
After 1 minute, let's repeat the process another two times until the milk becomes a very fluffy texture.
Preparing the Carrots
Let's place an empty cooking pot on the hob and add the carrots and milk. We will also add in the yoghurt as well as the sugar. Now let's mix the pot and then close the lid on a medium flame for 20 minutes.
After 20 minutes, let's check the carrots and they should become soft. Place the lid back on the pot for a further 5 minutes and after this, the carrots should become very soft.
Smashing the Carrots
Using a potato masher, let's smash the carrots until they become a fine think texture. Once smashed, remove the carrots from the pot and place it on a cooking pan on the hub. Allow the carrots to sizzle on the pan until the water has all evaporated.
We can also add in our red colour food colouring as this will give the carrots a nice rich red colour. After adding in the colouring, mix the carrots.
Now let's add the sugar and again mix the carrots. Let's also add the butter and also give the pan a mix.
Adding the Nuts
Let's add the Pistachios, raisings and almonds and give the pan a mix.
Adding Milk
Now we will add the milk from earlier as well as the green cardamons. Give the pan a good mix.
Preparing for Serving
Now the carrots are should be ready, let's place the carrots in a glass bowl. Once placed, we can now add our fluffy milk from earlier to top up the carrots. We can also add in some extra nuts for decorations.
Your Gajar Ka Halwa should now be ready to serve.
