Chicken Platter

Platter dish with chicken, rice and vegetables

The chicken platter provides a variety of different vegetables which can be eaten on traditional and festive occasions. Whether it is to be eaten at a big or small event, it is the perfect dish to have and enjoy.


Ingredients


Marinate Chicken

  • 2 tbsp Garlic and Ginger Paste

  • 1 tbsp Black Pepper Salt

  • 1 tbsp Salt

  • 1 tbsp Lemon Juice

  • 1 tbsp Yoghurt

  • 1 tbsp orange food colouring

  • 1 tbsp Kashmir Red Chilli Powder

  • 3 Boiled Eggs

  • 3 Boiled Potatoes

  • 1 tbsp Red Chilli Powder

  • 1 Whole Chicken

  • 10 Chicken Drumsticks


Platter

  • 1 tbsp Lemon Juice

  • 0.5 tbsp Turmeric Powder

  • 2 tbsp Red Chilli Powder

  • 4 tbsp Yoghurt

  • 6 tbsp Oil

  • 1 cup Fried Onions

  • Blended Cashew, Almonds and Coconut

  • Garam Masala Powder

  • 2 tbsp Garlic and Ginger Paste

Instructions


Marinate the Chicken


To your chicken, add the garlic and ginger paste followed by the red chilli powder, yoghurt, salt, black salt, lemon juice and our orange food colouring. Once added make the chicken.


Now, let’s add the boiled potatoes and eggs inside the chicken and tie the legs of the chicken.


Frying the Chicken


Place a cooking pot on the hub and add some oil to it. Next, add the whole marinated chicken along with the chicken wings.


Cook the chicken until it becomes a nice golden brown and toasted colour.


The drumsticks will be cooked early so once they are fully fried, remove them and place them on a plate. Continue to fry the chicken ensuring to flip it so that each side of the chicken is cooked.


Once the chicken is fried, let’s put the chicken on a plate.


Preparing the Chicken Masala


In a blender, add your coriander seeds, cumin seeds, black pepper, mace, half nut Meg, gloves, black and green cardamoms and then blend the entire ingredients.


Once it becomes a fine powder, let’s place the chicken masala in a plate.


Blending Nuts


In a blender, add in the cashews, almonds and coconut powder. Blend the entire ingredients until it becomes a fine powder.


Place the powder in a plate for later.


Preparing Base for Chicken


Place a cooking pan on your hub and add in some oil. Next, add the garlic and ginger paste and give it a good mix.


Now let’s add in the onions and again give it another good mix. Mix for about 30 – 40 seconds and then add in the cashew and almonds powder followed by the garam masala powder.


Also, add in about 3 tbsp of water and give it a good mix. Also, add the salt and yoghurt and again give it a good mix.


Next, add the turmeric and red chilli powder and again give it a good mix.


Mix the pot for about 5 – 6 minutes allowing the masala to good well.


Let’s add the lemon juice and allow time for the masala to boil.


Adding the Chicken


Now let’s add the chicken and start to pour the masala over the chicken. Close the lid for 10 minutes allowing the chicken to cook further. After 10 minutes, remove the lid and make sure to soak the masala into the chicken. We need to do this as this is a whole chicken.


Add the remaining chicken drumsticks to the pot and ensure to submerge them into the masala as best as possible.


Cover the lid for 10 minutes on medium flame. After 10 minutes, let’s check on the chicken, it should start to look finished now.


Checking the Chicken


Make a small cut into the whole chicken and the inside of the chicken should be pure white colour.


Preparing the Biryani


Place another empty cooking pot on the hub and add oil, green cardamoms, curry leaves, fried onions and give the pot a mix.


Now we can add almonds, cashews and golden raisins. Give the pot a good mix and then add in some salt.


Let’s add in three cups of washed and clean rice into the pot. Mix the rice and then add about 600 millilitres of boiling water and then close the lid.


Open the lid after about 10 minutes and check that the rice is still cooking. Place the lid back on the pot and leave for a further 10 minutes on a low flame.


Preparing the Platter


Place the rice around the platter keeping some of the platter exposed so that we can place the chicken.


Decorate the Platter


Additionally, we can decorate the platter by adding in vegetables which have been cut in patterns such as flowers and start.


We can also add in our fried chicken drumsticks and place them around the platter. You can also add some samosa and spring rolls.


Your platter should now be ready to serve.
