Chicken Jalfrezi

Chicken Jalfrezi with Green Chillies

Jalfrezi originated in the Indian subcontinent and has become one of the most popular dishes in the region and around the world. It is considered a hot-fry curry made with green chillies and dense red sauce.


Ingredients

  • 1kg Boneless Chicken

  • 1 Onion

  • 1 Green Pepper

  • 1 tsp Salt

  • 1 Red Pepper

  • 2 tsp Coriander

  • 2 tsp Red Chilli Powder

  • 2 fresh Tomato

  • 1 tsp Turmeric Powder

  • 2 tsp Garam Masala

  • 1 tsp Garlic Paste

  • 1 tsp Ginger Paste

  • 2 tsp Soya Sauce

  • 1 tsp Cumin Powder

  • 6 Green Chillies

  • 2 tsp Tomato Puree

  • 2 tsp Tomato Ketchup

  • 1 cup Fresh Coriander

  • 3 tsp Oil

  • 2 tsp Black Pepper

Place a large cooking pot on your cooker and add your oil in. Without allowing your oil to heat up, add your green pepper and give it a mix. Next, add your red pepper and give it another mix. Now, let's add the onions and again give it a mix.


With the vegetable now cooked, move it out of the pan and on a plate for later.


Preparing and Cooking the Chicken


In an empty cooking pot, add the oil as well as the garlic paste and ginger paste. Make sure to give it a good mix. Now let's add the chicken. Continue to mix for about 10 minutes ensuring that the chicken fully cooks. Once done, add the turmeric and chilli powder.


Let's also add the coriander powder as well as the cumin powder. Also, add the garam masala and the black pepper. With a number of ingredients now added in, give the chicken a really good mix. Make sure to fully mix it so that the chicken pieces have all touched all the additional ingredients.


Now, let's add the salt and again ensure to give it a good mix. Now let's add the tomato ketchup as well as the tomato puree. Before adding anything further, let's give this a good mix.


Now let's add the soya sauce for that extra boost in flavour. Next, let's also add our fresh-cut tomatoes into the cooking pot. We will also add our green chillies.


Putting it all together - add our earlier vegetables


Now, take your plate of cooked vegetables and add them to your chicken cooking pot. Once added, make sure to give it a really good mix ensuring that the chicken masala from before is fully mixed with our cooked vegetables form earlier.


Close the lid on your cooking pot for about 10 minutes and this should be enough, your dish should now be almost ready.


Continue to mix for about another 4-5 minutes. To ensure your chicken is fully cooked, using a small knife cut a chicken piece in two and the inside of that chicken should be a bright white colour.


To keep your dish fresh when serving, add in your fresh coriander.
