Chicken Fried Rice

Chicken Fried Rice with Vegetables and Egg

Fried Rice is a savoury dish which has been stir-fried. It consists of rice and it is usually mixed with other ingredients such as eggs and vegetable including meat of your choice.


Ingredients

  • 1 tbsp Soya Sauce

  • 0.5 Red Peppers

  • 1 tbsp Sugar

  • 1 tbsp White Pepper

  • 1 tbsp Vinegar

  • 4 tbsp Oil

  • 1 tbsp Salt

  • 2 tbsp Chicken Powder

  • 1 Garlic

  • 1 tbsp Black Pepper

  • 1 cup Carrots

  • 1 cup Cabbage

  • 1 cup Green Onion Leaves

  • 1 cup Green Peppers

  • 6 Eggs

  • 1 Onion

  • 1 kg Boneless Chicken

  • 1 kg Boiled Rice

Instructions


Prepare the Rice


First, we will need to prepare the rice. Take three cups of rice and wash them thoroughly. Once washed, let’s put a cooking pot on the hub and put two litres of water into it. After that, add a tablespoon of salt followed by some cumin seeds and allow the pot to boil.


Once the water is boiling, add in the rice from earlier. Close the lid and allow the rice to boil. After about 10 minutes, check on your rice and it should be fully boiled. Pick up single rice and it should feel soft.


Let’s take the rice out and put in a colander. Do this by playing a colander in your sink and pouring the contents of the cooking pot into it therefore rinsing the water.


Preparing the Eggs


Place cooking pot on your hub and add the oil in followed by the eggs. Give this a mix until the eggs have broken up into a fine thin watery paste. Keeping doing this until the eggs become fluffy in texture. Once finished, plate the eggs.


Cooking the Chicken


Using the same pot from above, add the oil followed by the Garlic and keep mixing until the garlic becomes a golden brown colour. Once the garlic is golden brown colour, we can add the chicken and start to mix the pot again. Let’s close the lid for about 3 – 4 minutes allowing the chicken to turn golden.


After 3 – 4 minutes, remove the lid and the chicken should look a much more golden colour. You may also see some chicken stock, let’s wait for a further 2 minutes and the chicken stock should slowly evaporate.


Adding in the Ingredients


With the chicken now moderately cooked, let’s add carrots, green peppers, red onions and red peppers. Let’s give this a good mix. Once mixed, add the cabbage, salt, sugar and then give it another mix. Make sure to follow mix all the ingredients and allow it to cook for about 5 minutes.


Adding Rice


Now let’s add in the boiled rice from earlier. Make sure to add the rice slowly to ensure that none of it falls out. Once all the rice has been added to the pot, start to mix the pot. Make sure to mix the rice with the chicken and vegetables.


Adding in the Extra’s


Now let’s add in the chicken powder on top of the rice followed by the black and white pepper. Also, add in the vinegar and Soya sauce.


After adding, again give the pot a good mix ensuring that all the ingredients are mixed.


Finally, add in the eggs and the spring onions and mix the pot.


Our rice is now ready to be served
