Bangladeshi Kala Bhuna Recipe

Kala Bhuna is a famous meat delicacy from Bangladesh. The dish can be prepared with any red meat.


Ingredients


Kala Buna Ingredients

  • 2 Onion

  • 1 tsp Cumin powder

  • 10 Fried Red Chilies Fresh

  • 1 Garlic and

  • 1 slice of Ginger Smashed

  • 1 tsp Turmeric powder

  • 1 tsp Red Chili Powder

  • 4 tsp Oil

  • 2 tsp Salt

  • 5 tsp Mustard Oil

  • 2 Fried Onions

  • 1 Red Onions

  • 1 cup Fresh Coriander

  • 1 tsp Garam Masala powder

  • 2 Kg Red Meat


Garam Masala Ingredients

  • 2 Curry leaves

  • 4 cut Cinnamon stick

  • 3 Star anise

  • 3 Black Cardamom

  • 4 Green Cardamom

  • 8 Cloves

  • 8 Peppercorns

Let's prepare the meat. Place the meat in an empty cooking pot but don't put the cooking pot on the cooker just yet. To your meat cooking pot, add you're the red onions.


For the garam masala, let's add the curry leaves, cinnamon stick, star anise, black cardamom, green cardamom, cloves and the peppercorns. Let's also add in the fried onions as well as the turmeric powder.


Also, add in the chilli powder as well as the cumin powder. We can also add in our salt as well as the smashed garlic and ginger. Let's top this up by adding in the oil.


Using your hand, mix the meat with all the ingredients that we have added. Make sure to give it a good mix as the mix here will determine how well it tastes at the end.


Cook the Meat


With the meat now fully mixed, let's place the mix on the cooker on a high flame for about 5 minutes. After 5 minutes, take the lid off and ensure to give you cooking pot a really good mix.


After mixing, place the lid back on and allow to cook for about 5 minutes. This will force the water to come out of the meat. As we do not add any water into the cooking pot, the water of the meat will be used to ensure that it does not burn.


This is why it is important to ensure that you mix the cooking pot after 5 minutes to ensure that it does not burn.


With the meat now fully cooked, let's add the garam masala. Adding in the garam masala will really boost the flavour of the dish by many folds.


Almost ready


The signature taste of the Kala Bhuna dish is spice therefore adding in the space will help to develop the taste.


Preparing the Fried Onions


We will need to top up our dish with fried onions. In am empty cooking pot, pour in some oil and allow it to heat up. Next, add in your smash onions as well as your smashed garlic and ginger. Ensure to give this a good mix. Also, add in the chillis and again give it a very good mix. You should be able to smell the spice.


Allow the onions to become a rich brown colour.


Add the Friend Onions


With your friend onions now ready, add it to your Kala Bhuna dish. Your dish is now ready to be served.
