Aloo Gosht

Lamb with Potatoes

The Aloo Ghost is a spicy dish that consists of mutton or lamb with potato. It is a thick stew that has a strong gravy sauce which when paired with rice or naan provides an amazing flavor. It is considered a main meal in the eastern part of the world and goes very well with lentil dishes such as daal or mixed daal.


Ingredients


  • 2 tbsp Non-Spicy Red Chilli Powder

  • 1 tbsp Spicy Red Chile Powder

  • 0.5 Turmeric Powder

  • 1 tbsp Cumin Seeds

  • 2 tbsp Garam Masala Powder

  • 2 tbsp Coriander Powder

  • 1 cup Fried Onions

  • 4 tbsp Tomato Puree

  • 4 tbsp Yogurt

  • 1 tbsp Ginger Paste

  • 1 tbsp Garlic Paste

  • 1 tbsp Green Chilli Paste

  • 1 tbsp Salt

  • 1 cup Fresh Coriander

  • 4 tbsp Oil

  • 2 Curry Leaves

  • 2 Black Cardamons

  • 4 Cinnamon Sticks

  • 1 tbsp Black Pepper

  • 1 kg Lamb meat


Instructions


Preparing the Potatoes


Let's get some potatoes, it does not really matter which type of potato you use as long as you are able to hold them and peel them. Firstly, peel the potatoes but ensure to keep some of the skin on. Next, cut the potatoes in half and soak the chopped potatoes in water.


Preparing the Base Cooking Pot


Place a cooking pot on your hub and add in some oil and the garam masala ingredients. Next, add in the meat and give the pot a good mix. Continue to mix the meat for about 3 minutes and the meat should change color.


Next, add in the Ginger, Garlic, and Green Chilli paste and mix the pot.


Also, let's add about 3 tbsp of water as well as the fried onions and then mix the pot. Continue to mix for about 2 minutes and then close the lid for 5 minutes on a medium flame. After 5 minutes, remove the lid and you should notice that water is coming out of the meat.


Adding in the Spices


Into your pot, add all the powdered masala spices as well as some salt, and mix the pot. You will see that the pot will start to turn a reddish color. Close the lid for 5 minutes on a medium flame. After 5 minutes, remove the lid and you should notice that the oil is on the surface. This means the meat is cooked well.


Let's also add some water to allow the meat to be more tender. We can also add in the yogurt and give the pot a good mix.


Also, add the tomato puree and then mix the pot. The oil should now be on the surface and you can use this as an indication that the meat is fully cooked. Close the lid for 35 minutes.


After 35 minutes, remove the lid and the meat should now be fully cooked, it should be tender also.


Adding in the Potatoes


Finally, now we can add the potatoes into the cooking pot as well as two cups of water. Continue to mix the pot for about 3 minutes and then close the lid for 10 minutes on a medium flame.


After 10 minutes, remove the lid and we can now check to see if the potatoes are cooked. If the potatoes are soft and easy to cut using a spoon then the potatoes are also fully cooked.


Final Touches


Let's also add in some ginger, lemon juice, and green chilies as well as fresh coriander and give the pot a final but gentle mix. Close the lid for a further 3 minutes and the Aloo Gosht is now ready to be served.
