Achari gosht is a simple yet wonderful recipe that has mutton with the presence of pickled achars. It is boosted with flavours of spice and is absolutely amazing to the taste. This dish gets its name due to the achar that is included with the mutton. Other key ingredients include yoghurt, peppers and a number of spices.
Ingredients
Pepper Paste
0.5 tbsp Salt
1 tbsp Fennel seeds
1 tbsp Black Cumin Seeds
1 tbsp Dry Mango Powder
1 tbsp Chaat Masala Powder
1 tbsp Cumin Powder
1 tbsp Red Chilli Powder
3 tbsp Yogurt
6 Green Peppers
Dish Ingredients
1 tbsp Red Crushed Chilli
2 tbsp Garlic and Ginger Paste
2 tbsp Red Chilli Powder
6 tbsp Yogurt
6 tbsp Oil
2 tbsp Crushed Coriander
1 tbsp Cumin Seeds
3 tbsp Tomato puree
0.5 Fennel Seeds
9 Cherry Tomatoes
1 kg Lamb Meat
1 tbsp Kashmiri Red Chilli powder
1 tbsp Coriander powder
1 tbsp Cumin Powder
1 tbsp Chaat masala powder
0.5 tbsp Salt
1 tbsp Black pepper powder
1 tbsp Fenugreek Seeds
10 dry Red peppers
1 tbsp Fenugreek Leaves
1 tbsp Nigella Seeds
Instructions
Preparing the Achars
We will first need to mix our spices together into a fine paste. Once mixed, we will make a small cut into our peppers and fill it with our mixed spice paste.
Cooking the Meat
Place an empty cooking pot on your cooking hob and add in the oil and allow it to heat up. Once heated, add the meat into the port and give it a mix.
Now let's add in the garlic and ginger paste and add the salt. We will also add a cup of water and allow the meat to cook for about 10 minutes on a medium flame.
After 10 minutes, let’s remove the lid and check the meat. The meat should have changed colour now and we can begin to add in some spices.
Adding in the Spices
To the pot, add coriander seeds, black seeds, crushed chillies, fennel seeds, cumin seeds and then give the pot a mix. Make sure to mix the pot until all the spices are mixed with the meat. Close the lid for five minutes to allow the meat and spices to cook.
After 5 minutes, the meat should now appear to be cooked.
Now we will add dry peppers, red chillies powder and all of our remaining spices. We will also add about 3 tablespoons of water as well as the yoghurt.
Once added, let’s mix the contents of the pot.
Other Ingredients
Let’s add in the tomato puree as well as another three cups of water and let’s close the lid for 45 minutes on a medium flame.
After 45 minutes
Let’s check the pot and the meat should now be done and ready. You can test the meat by checking the softness of the meat; it should be nice and soft.
Final Ingredients
Now let’s add in the peppers and the tomatoes and give the pot a final mix. Finally, close the lid for a further 15 minutes and the dish should now be ready to serve.
